As 88% of all incoming baking walls show (serious) defects and / or defects, all baking walls above the € 5,000 retail value are completely or partially overhauled upon arrival.
In the case of a complete overhaul, the following steps are taken:
Disassembling the fryer / baking wall.
Complete baking wall is sprayed completely clean with one of the most powerful industrial steam cleaners. This gives a pressure of 180 bar, with water of 140 degrees Celsius (steam).
Here, among other things, intensive cleaning takes place of:
- All visible parts
- Steel behind the insulation
- All seams and crevices, old sealant are completely sprayed loose and re-sealed
- Edge extraction & Blinds
Oven is completely disinfected with special chemicals.
Then mounted again and cleaned again, this time by hand.
The stainless steel polished and processed with a protected layer of chemicals.
Step 1 to 5 a good 5 days full time labor!
The baking wall then enters the workshop where all parts and pans are inspected very thoroughly and critically and are replaced immediately if there is too much wear.
All technical parts such as switches, burners, pilot burner, control clocks etc. are fully technically cleaned and replaced if necessary. In the presence of a grease filter installation under a baking wall, it is also completely disassembled and put in a 90badC chemical bath for a week. Where the canal work again comes out as bare and clean canalwork.
In case of bad pans, the pan is replaced in the whole or the bad part (provided the rest of the pan is still in good condition).
All sensitive welds are re-inserted. Because 82% of the leakage results from bad welds.
All flue gas ducts are often replaced immediately, this because a used oven often has to contend with a lot of fat accumulation in the flue gas ducts. This gives leakages and is a fire hazard.
Now there is a complete test of the baking wall. In which all functionalities are checked at full 100% operation.
And lastly all burner processes are re-adjusted, with professional calibrated measuring equipment.
This entire process gives an average of 6 to 12 days' work (full full-time days - 8 hours) for a 1st degree mechanic, to carry out a complete overhaul on a baking wall. A very labor intensive process, resulting in a baking wall where you can enjoy working for another 7 to 14 years.
